Hi all,
how I can get my Ubuntu 16.04 Server VM in fullscreen?
I installed kernel headers, dkms, build tools, guest addition ... I modified GRUB_GFXMODE key in /etc/default/grub but nothing: I got only 640x480 resolution.

There are several things missing from your post, like, are the GAs actually installed? Did the installation succeed? Also, you said you're on the server version, not sure how geared towards high-end graphics it is. In any event, you'll need to post the VBox.log. Zipped.

Servers usually do not have X and are run from console so the only thing that you can achieve by installing the guest additions are shared folders. Now to your screen size, you need to manually adjust by using frame buffers. Easy enough and you can see how and get help at the Ubuntu forums since that is an OS specific question. In the slim chance you have actually installed graphics packages you might not have installed all that you need and in any case if that is what you are wanting you should simply install a desktop version of Ubuntu instead of the server and be done with it.

Perhaps I didn't make myself clear. setting GFXMODE will not help nor will the guest additions. Both require that you have xorg installed since that is what they use to change the resolution.
Search for "setting framebuffers in ubuntu server" and you will see what you need. Usually setting vga=792 on the boot line or another value will let you set it to what ever you like.
