Since it no longer uses DKMS, how does kernel support in 5.1 work?
With 5.1 installed, do I need to do anything special before and/or after installing a kernel and/or VirtualBox update?
When I am ready for 5.1, do I need to do anything special to prepare for upgrading from 5.0?

You should not need to do anything special other than removing the current install before installing the newer release. Anything that would be required is built in to the install process.
