I have seen many issues like this and have read many of them but I still can't seem to get a resolution.
I am using Windows 7 Home Premium 64bit (build 7601 sp1) but can not select Ubuntu 64bit. I have searched the bios and there are no settings that I can set for this.

Your processor does not support hardware virtualization. You will only be able to run 32 bit guests and they will be slow.

Guest: I can't create a 64 bit Linux guest, only 32 bit options available (I'd like to create a 64 bit Red Hat, but any Linux would do)
When I create a new guest (or review Settings > General > Basic tab) the only options in the Versions field are (32bit) options (same as screen shot above).
I'm a complete noob. Is there a configuration step that I missed?

Well this is not helping as it does not show anything about the host. Post the guests log file ( as an attachment ) instead.

Intel Processor ID Utility says that Virtualization technology is supported, perhaps there is some other configuration I am missing?

WARNING! 64-bit guest type selected but the host CPU does NOT support HW virtualization.Until this is fixed however you will not be able to use 64-bit guests.
Make sure that you do not have hyper-v or xpmode installed on the host, and/or contact the host PC vendor to see about a bios update that allows VT-x.
