Looking for detailed documentation of exactly how they work and what is the difference in files ".vbox" ".vbox-prev"

"vbox-prev" is a backup of the file contents prior to the most recent save. If the file is saved again then the "vbox-prev" file will be deleted, the existing "vbox" will be renamed to "vbox-prev", and a new "vbox" will be written.
You may also see a "vbox-tmp" - this is what will become the new "vbox", provided the shuffle described in the previous paragraph proceeds without a hitch.

When something changes or every time I turn off the virtual session?

Surprisingly (as the question may seem obvious), I don't know. I believe the vbox file is updated every time the VM is run (e.g. recording last window size), and presumably also when settings changes are made. However I've never had a reason to check these assumptions.
