I just realized all my test operating systems are installing to my SSD. It's only 120gb and now it's full...
Why is it that I have Virtual Box installed on my mechanical HD but everything is installing to my SSD.
Is there an option to change this?

This can be changed in the preference section of VirtualBox. It will not change ones previously installed but will on new installs. You would need to remove the guest/s, without deleting, move to the proper location, and then use the add feature to put it/them back.

Can I not just changed the location and then copy all the folder contents?

The control file will not see that you have moved the folders and complain that they are gone. You must do it the way I said to get it to work properly.
Well there is one other way but very dangerous and not suggested, and why I don't discuss it.

It means use the "Remove" option, and whne prompted for the file deletion, answer "No" or "Keep files".

Totally close Virtualbox, every window of it. Wait about 30 sec, then start it and try again.
