If I want to setup a mini windows network on a separate network from my own using Virtual Box is this possible? I have tried using the default NIC on two Windows XP installations to test it but I noticed both boxes have the same IP address which obviously I can't ping one another.

To use the internal network from two vms, you simply assign the NIC in each vm to the same internal network. If you use the default name (intnet) is should just work.
By default the NICs will not get IP addresses automatically. You would need to enable DHCP on this network (see the users manual) or give them static IPs manually.
