What network mode did you configure for the guest?

What kind of networking capability does your host have? E.g. is it connected to a router, to a LAN etc.

NAT (Adapter Type: Intel PRO/1000 MT Desktop (82540EM)), Cable connected is ticked
Mac Address is 080027D49B2C

it is connected to a LAN via Airport (which is broadcast by a router) - internet works on the host

To me it doesn't look like you've even enabled a NIC. But, I'll defer to a networking expert, when one comes along.

NIC 1: MAC: 08002778462E, Attachment: NAT, Cable connected: on, Trace: off (file: none), Type: 82540EM, Reported speed: 0 Mbps, Boot priority: 0, Promisc Policy: deny, Bandwidth group: none
NIC 1 Settings: MTU: 0, Socket (send: 64, receive: 64), TCP Window (send:64, receive: 64)

I have highlighted the important parts of the showinfo which looks correct (as far as VirtualBox is concerned). Intel pro1000 adapter set to NAT and enabled with cable connected.

So now you need to look at the guest. Make sure that the network adapter IntelPro/1000 was detected and or run the network trouble shooter to see if it can fix itself. Is this a full retail installable Windows 7 or is it one of the free IE* VPC downloads?

I have tried the network troubleshooter which returns "Windows did not detect a properly installed network driver". I am running the free IE VPC downloads, i.e. they were downloaded and installed using a script.

This is your problem then. These images are designed to work on the MS Virtual PC and since they are created using a dead authentication key can not be changed. You probably need to select a different virtual network adapter and see if it detects it being installed.

None of the following network adapter options work:
PCnet-PCI II (Am79C970A)
PCnet-FAST III (Am79C973)
Intel PRO/1000 MT Desktop (82540EM)
Intel PRO/1000 T Server (82543GC)
Intel PRO/1000 MT Server (82545EM)
Paravirtualised Network (virtio-net)

Is it possible to try and download an intel ethernet controller driver and install it in the guest OS?

Sure you can try but it would need to be installed in the guest. I wouldn't hold much hope though as more times than not it refuses.
