Hardware recommendations for new build

I'm starting to gather details to build my new machine. I'm looking for some recommendations for harware specs.
My setup will look like this:
Windows 7 host (Primary use = To host Virtualbox, Run a syslog application that collects events from my firewall, Windows Office when I need it, File sharing, Media playback.
Ubuntu 12.04 Workstation VM#1 (Primary use = Main VM for surfing the internet, some media playback)
Ubuntu 12.04 Server VM#2 (Primary use = MySql Database and a few front end applications) Not too heavy a load. Primarily a test environment for some security tools.
My current hardware:
Asus P5K-SE motherboard
8GB RAM
Intel Core2Duo E6550
4 x 2GB Sata HD's
I'm finding now that I got everything up and running I'm experiencing high CPU. It's tolerable but sometimes spikes are causing some lag. Noticeable when typing characters etc. The CPU is generally running at approx 60 - 65% load
So CPU is the main thing I'm concerned about. My 8GB of RAM seems plenty. I would like to keep things as small and low power as possible, hopefully Micro-ATX if possible. Looking to hold at least 6 x SATA HD's. I've been looking at the Fractal Design define-Mini case and the Intel I7-3770S which looks cool because of it's hyperthreading technology. Not sure if this is overkill or not enough.
Eventually I would like to maybe use this new box as a FreeNAS server with ISCSI, and eventually build an ESXi whitebox. Just looking at what my uses will be down the road.
Anyway, I'm welcome to suggestions for CPU, Motherboard, Case etc
