Domain between PC/Mac

Is there a way I can setup Server 2008 on my mac book pro and my clients on Windows 7 machine and they talk to each other without doing a bridged adapter?

Server(guest) on mac(host) is going to host the .local domain active directory dns dhcp etc...
Windows 7(guest) on Windows 7(host) machine

I was able to do this last night but I had to use bridged network and when I setup DHCP the server started handing out IP's to my real devices (xbox, tv, phones etc...) instead of my router. The reason I need this is when I setup a svr and Windows client on either the mac or pc its very very slow...

In general, no. Networking across a physical network requires a physical network connection. Only NAT and bridged provide that, and only "bridged" allows two way comms - the client end might get away with NAT, but the server end must use bridged.
