Dual Monitors - Remote Desktop

I am looking for guidance on how I configure my Windows 7 VM with dual monitors and then access it remotely via Remote desktop such that I see both monitors, or maybe extend the remote desktop to cover both monitors.

My problem has been that I setup 2 virtual monitors because I have 2 physical ones so I can utilise my available desktop space.

I occasionally remote desktop in to this virtual machine on my nominated port using windows 7 remote desktop.

However, the remote desktop only shows 1 of the two monitors and some applications 'start' on the second monitor, where I can't see them.

Any suggestions other than disabling the second monitor prior to remote desktopping in?

Assistance would be appreciated :)
