can dream come true?

Hi, i'm new on virtualization and i would like to know if a dream can be realized.
my actual scenario is:
i have a customer that is working on different PC. Actually the different PC have different HW configuration specially for what concerning the Video display config.
let say that basically he operate on 2 different PC. the first one is a PC with 3 monitor configuration (from left to rigth, 1: 1280x1024, 2: 1200x1600, 3: 1200x1600 with an Nvidia MXRT5200 video board)
on the second PC he have 3 monitors as well but with different resolution (1: 1280x1024, 2: 2053x1680, 3: 2053x1680 with an Nvidia MXRT5200 video board)
i would like (for security reason) to create a portable VM (windows host and windows guest) on an USB key, and let the customer plug it in the PC, run the appropriate VM (i guess that i should have 2 VM configured due to the different resolution) having like this the physical PC without aplication installed, and the customer having the access to the application in thir pocket.
could this be possible?!?
