I guess this is a very weird question as "why would you want to Virtualise in a Virtual OS?"
Well, i don't!!
I need the Hyper-V service in Windows Server 2008 R2 in order to install RemoteAppl/RemoteWeb service which i'm currently R&D on. problem with R2 is that you will need Hyper-V service as prerequisite.
Anyone have any idea how to get it done?

If it requires hyper-v to operate it will not happen in VirtualBox. Sorry.
