Is it possible to make a VM and then move that VDI to another host? For instance, install everything in Windows, and then move the VDI to OpenSolaris?

Yes. There is nothing in the VDI file that ties it to a particular host, except perhaps a reliance on the host CPU type (e.g. because host CPU type is detectable by the guest, change of CPU may cause a Windows guest to BSOD and/or prompt for activation).
It's a different story with the XML files associated with the VM. These may or may not be portable, but in any case VBox doesn't provide an easy mechanism for moving them around. They are best recreated manually on the new host.
