To get the VM up and running, I have to:
- Start the VM and then stop the GRUB timeout
- Detach and re-attach the disks (they change from "Unavailable" to "Held" in the "usbhost" sub-command
- Attach the disks to the VM (they are now changing to "Captured")
- Continue the boot of the guest to mount the disks
