Testing a mail server

So I'm trying to create a test platform of a complete network.
I created 1 VM that has windows server 2003 (active directory, dhcp, dns server) and 2 vm that has win xp pro sp2 (client1 and client 2)
Both are hosted on a windows xp system.
I managed to configure and make the active directory working. Client 1 and client 2 can talk and share files w/ server 2003.
My next goal is to simulate a mail server.
Is it possible to create and send mail between client 1 and client 2 using server 2003 as the mail server with a fake domain, i.e., tester.local
So basically, can there be an email address called client1@ltester.local ??
Do I just need to add a new server role and install the mail server option under "manager your server"?
