I've looked around and can't find an answer. So what exactly is nested paging?

It's a CPU feature. It's currently implemented in the Intel Core i7 CPUs, and some AMD CPUs. If you search Google for nested paging, then you get a result from AMD that explains it a bit.

Nested Paging can perform a real-world CPU load scenario. Nested Paging needs to be turned on manually regardless of guest architecture.
