You need to add
vga=864
to the boot line. How you do this depends a little on which distro you are using.

That kernel parameter (vga=xxx) will only be used during boot and in CLI mode. Once the GUI starts, it will revert to whatever resolution is set by the live CD creator when it's running on the VESA driver.

Well I've done it now. I upgraded to 3.0.4 and can not control the dang thing any longer. I reverted back and tried again and it still will not change. Stuck at 1400x1050x24 and will not go up or down now. Plus now I must run the command prompt as admin to get the cli commands to even work. Arghhhhhhhh Back to the drawing board.

What is really interesting is that

doesn't help either. This instruction puts a global limit in VirtualBox.xml.
