When I right click any of my running vm in VirtualBox GUI,the "Show" option is always disabled.
Is it because I run then in a headless mode ?

Yes. You cant show something that doesn't exist.

How do you expect to show non-GUI process? Can you see a GUI from apache web server? When in headless, there is no GUI available to show.
