Try accessing the host with ssh, then starting the program 'screen', and then start the virtual machine from within screen. Disconnect from screen (without logging off - I think it's ctrl-a + d), and then you should be able to close the ssh connection without terminating the virtual machine.

James is correct. It would be best to run it from a screen session.
How do you connect to your Host with VNC? Does it start a new X session or something? It should take over your current desktop and leave it when you close the VNC session. Does the same happen for other applications, like OpenOffice.org or a terminal?
