Is there any way to specify a number of core a guest can use? I have looked all over in the settings and have not found anything.

The machine that is hosting has 4 physical cores, two Opteron 270s. The guest system only has a single CPU present. I would like the guest to have access to 2 cores, but I just do not see how to grant that access.

VBox currently only supports a single logical core VM. SMP is in the works but not here yet. Search the forum for other posts discussing this issue.

Thanks for the reply TerryE. Even though VirtualBox only supports a single core/CPU for the guest, I am extremely please with how well it works :)

Unless you have a special micro-kernel (as VMware ESX has) it is very difficult to get good performance out of SMP VMs. In general it is better to split the load into multiple VMs -- for example in a LAMP application, move the MySQL D/B into its dedicated applicance and interconnect the LAP appliance with the LM appliance using internal networking.
