Hey,
I wanted to install Active Directory on a virtual box server that i have installed already but do not want to interfere with the internal network I have. I am installing it at work, so I dont want AD to be seen on the company network. What networking mode do I choose?

I did read the user manual but still can't determine which one to choose. Again, I need to at least have access to the internet but don't want it connected to the internal network what so ever.

NAT is the only way you should go then. There will be no traffic going from the outside to your VM, unless you ask for it from the VM itself (i.e., a website and thinks like that). The VM won't be visible from the outside world.
If you want to test it with a client VM, add Internal Networking.

Ok. I will try that. Thanks for the reply. Tell me this, what if I wanted two servers to communicate on the same network. What I use internal? That question is for home use.

If the machines are virtual machines, residing on the same Host, then you use Internal Networking. See the manual for more info about VB networking.
