It will work just fine. Just enable PAE in the VM settings, or after the install, boot from the ISO again, rescue a broken system, open a shell with the installation as root drive and install a different kernel, like linux-image-virtual. Then reboot, hit ESC if you see no Grub menu and select the Virtual kernel to boot it. Now you can remove the Server kernel and related packages if you like.

Sasquatch is using shorthand for a standard Linux system management function. You can easily swap kernels. In the case of Ubuntu the -virtual kernel is a server kernel optimised for use in VM under VMware or VirtualBox. The Ubuntu community docs will explain how to do this. Seek and ye shall find :-)
