I was running at 1024x768 before I installed the guest additions, and now I'm stuck at 800x600. When I try to change to a different display type and set it above 800x600, it doesn't work at all - the screen goes all fuzzy and resets back to SVGA after 15 seconds.
I tried changing the settings in xorg.conf, but it still reverts to SVGA. I also had to boot into recovery mode and change xorg.conf right from the start - when I rebooted after installing Guest Additions, it was stuck in an endless loop of trying to display X11, X11 would crash, and it would keep trying over and over.
Ubuntu 7.10 - guest additions killed it!
I too am having a similar problem. I installed additions, tried to change the screen, rebooted, and now my screen is completely messed up. This is with Ubuntu 7.10. Here's what it looks like:
