Port forwarding and logging

I have an ubuntu squid server running on virtualbox. My browser is pointing to virtualbox and I then port forward to my ubuntu server. I want to ensure that there are no packets bypassing this, is there any logging / monitoring I can switch on to confirm this?

Probably, but it would have nothing to do with VirtualBox. It would be exactly the same as if you were using physical machines. Network monitors are not even aware of virtual machines. Devices on a network look just the same whether they are physical or virtual machines or other things like smart phones, radios or even refrigerators.
