Is there a way to get copy/ paste working between a host Mac and VM ubuntu server? I have it enabled in the VB settings and I have the tools installed in Ubuntu but it doesn't work. I am using the latest version of MacOS, Ubuntu server and virtual box.

By definition a Linux server does not have a desktop so that means no "X", which is required for any copy and paste. You could install a desktop but then you would not have a server so the outcome would be the same if you install a normal desktop OS to begin with.

As Perry mentions, a clipboard is a WIMP concept - the idea is to allow you to copy data between application windows. The clipboard is maintained by the Window manager. No Window manager, no clipboard.
