VirtualBox not showing updates?

In that case, shouldn't they just have 5.0.x be the big official download until they get 5.1.x to a stable version?

Coulda, shoulda, woulda, but this is what we have. The DEVs decide when to change the state of what is shown and you would need to ask them.
I myself always build from SVN and have the alpha source as it were.
