Hay everyone, is anyone able to tell me how I can setup host networking so i can access my GUEST OS (Debian Lenny) from my HOST OS (Mac Leopard) without an internet connection but also letting the GUEST OS to have access the internet. I need this so i can setup a sandboxed testing server on my local machine.
Any help is greatly appreciated?

First welcome to the forums,
Look at section 6.6. Internal networking of the users guide and see it this is what you want.
The rest of the networking schemes are contained in section Chapter 6. Virtual networking.
You can see the entire users guide by clicking help then contents from the VBox program.
