I looked and looked and I cannot find an OS compatibility chart for VB. Which is the latest version that will run on a Mac OS El Capitan host? It looks like it will be one of the 5.x versions.

I'm not aware of such a detailed list, only what's in the manuals. You can search up a particular version's manual with this link:

https://download.virtualbox.org/virtual ... Manual.pdf\

and replace Z.Y.X with the version number of Virtualbox you want to investigate. For example, 6.1.32's manual is:

See section 1.4 in the manual. By successive approximation, you can quickly pin down which, if any, versions were supported on El Capitan.

Took me a while to work through all those manuals, but for the sake of anyone else looking for this info:
Support for Mac OS X 10.4 (Tiger) was removed with VirtualBox 3.1.
Support for Mac OS X 10.7 (Lion) and earlier was removed with VirtualBox 5.0.
Support for Mac OS X 10.8 (Mountain Lion) was removed with VirtualBox 5.1.
Support for Mac OS X 10.9 (Mavericks) was removed with VirtualBox 5.2.
Support for Mac OS X 10.10 (Yosemite) and 10.11 (El Capitan) was removed with VirtualBox 6.0.
Support for Max OS X 10.12 (Sierra) was removed with VirtualBox 6.1.
Support for Max OS X 10.13 (High Sierra) and 10.14 (Mojave) was removed with VirtualBox 7.0.
