I have W10 x64 v21H1. I thought I turned off all Hyper-V stuff, but msinfo32 indicates pieces may be running. Will these interfere with VB at all or slow down VB VMs?

VirtualBox on top of Hyper-V is still a work in progress, and considering Microsoft keeps tweaking things, it may remain so.
The only way to find out is to try it with a quantitative test. Do something repeatable and stopwatch-timeable in a VM with Hyper-V completely off. Time repeats of the process a few times to get an average time (the process will be a good test process if the times all come out about the same.
Then enable a Hyper-V-influenced service and try the test again. Repeat until the various services are tested. The results will answer your question.
