I know where the VM files are stored, but that is too late in the process for me.
The default settings for windows os types are wildly different from optimal for me. So each time I set up a VM, I must open the settings file and go through a hundred mouse clicks getting the settings right. What I would like to do is either
A: change the default settings of an existing OS type to match the settings I want
OR
B: create a new OS type with the setting I want.
Can anyone point me in the right direction?
How do I override default settings for an OS Type

I'm a bit confused about your post and I think you've got the wrong forum section.
In the API, you explicitely need to fetch the settings from an OS Type and apply them to the VM yourself.
Or do you mean to edit the sources of VirtualBox to integrate a new OS Type?
Or if you mean in using the final product, that can only be done via a script.
