Got it and it seems to work (i.e. no more black screen) but it still seems like the 3D acceleration is not really working. Do I need to modify something on Ubuntu side (like changing the compositor and whatnot)?

3D is not expected to work with non-X11 applications like GNOME Shell as a Wayland compositor. It should still work, as well as it ever has, for X11 applications running under xwayland.
This is an area where user contributions are welcome. It would most likely mean implementing Nvidia's EGLStreams API.

Any way to work that around? Currently I don't find the system really usable due to the UI being laggish. Disabling Wayland should help. Finding people interested in contributing code should help more. There seem to be enough people interested in seeing it done, perhaps one or two would also have the technical know-how.

I'm still having this issue in VirtualBox 5.2.6. With 3D acceleration enabled, I get a black screen when booting Ubuntu 17.10. With 3D acceleration disabled, Ubuntu 17.10 gets to the desktop without issues.

Note: This also fixes the Monitor Count of 2.
I couldn't get past the blank screen without disabling the 3D Acceleration, but even then could never get 2 monitors to activate.
The newest Guest Additions fixes both the blank screen, 3D Acceleration, and multiple monitors.

I had a similar issue with CentOS 7.4. The top 20% of the screen was black. Disabling 3D acceleration circumvented the problem.
My CentOS 6.9 and Fedora 27 VMs had no such issue.
