Unable to login to Redhat host
I do not know the password or login. How do I reset it? The VM starts just fine, I just can't login.

That's nothing to do with VirtualBox and there is no way to use VirtualBox to bypass standard OS security.
You could try RedHat Forums, but I wouldn't hold out too much hope, as if it were easy/possible it wouldn't be a very secure industrial grade system. IME it would require a 'System Administrator' with the appropriate level of security permissions who could reset the user password.

What is the process to reinstall the VM? I think it might be easier than try to recover, it's a new install and there is nothing on it.

You can simply run the iso installer again and choose to erase the existing system, or delete the existing VM using the VirtualBox Manager - from the Menu, the Choose Machine > Remove... > Delte all files - Then create a new VM as before.
