I've deleted the old VM, and created a new one. Now, after the initial boot with the command line interface, the Mac Recovery GUI automatically starts. I've done nothing different, apart for enabling USB3 compatibility in VB. Maybe this is making the difference?

While installing HS, the first thing to do is to go to Disk Utility and format the virtual drive as Mac HFS+ Journaled. This way, the OS installer will recognize it as a valid drive.
