What Guest OS's can be run?

What Guest OS's can be run?
So, just to be clear, if my host OS is High Sierra then my guest VM can only be High Sierra?

With macOS guests (on real Apple hardware) you can run at least Leopard up to Big Sur, although you may have some messing around with cpu types if the OS uses cpu instructions that are incompatible with your hardware.
