Any suggestions on mechanisms to be able to able to repair broken system/kernel files in a virtual disk by manual rebuild ?
If I change binary code in a kernel file and cannot boot a virtual disk, is there a method to mount that .vdi or .vhd disk on another linux system and access all the virtual disk folders and files ?
Any links to topics under that general idea would be appreciated.

I could, of course, backup the original unbroken disk image but that's not what I've got in mind.
I just read about using a live-CD image but then how do I mount the broken .vdi/.vhd on the running live CD to repair what's broken ?

Booting the VM from a Live CD will let you do to the VM's disk whatever the Live CD is equipped to do.
You can boot the original VM with the Live CD. It should auto-mount the VM's disk. Se the Live CD OS's help channels to fix problems mounting the disk or other issues.
